The goal of Hunt Cellars is to create “memorable wines”, wines that become part of your life and memories. “You know the kind of wines I mean,” explained winemaker David Hunt, “the kind that prompt you to remember not only the wine, but also the fabulous meal and the great company you enjoyed that evening.”
Making such a wine means starting with the best fruit possible, and Hunt Cellars is committed to starting that search right here in Paso Robles. The majority of the label’s grapes will no doubt come from the estate vineyards in Creston, 550 acres of rolling hills and incomparable 50-mile views in every direction. The vineyard property offers exceptional potential due to the variations in its terrain and soil types. There are no less than four distinct microclimates within the acreage, which currently has 100 acres planted to Cabernet Sauvignon, Sangiovese, Syrah, Petite Sirah, Cabernet Franc, Primitivo Zinfandel, and a test block of Viognier.
The site for the estate vineyards was selected and purchased in 1996 after an extensive search throughout California, Oregon, and Washington, clearly underscoring Hunt Cellars commitment to the Paso Robles viticultural region. However, the label will always look for the best grapes possible, even if it means sourcing grapes from other high quality winegrowing areas in California.
Commitment to quality is at the heart of David Hunt winemaking philosophy, a philosophy that also incorporates an allegiance to the varietal expression of the grape. The wine is handcrafted in small lots, resulting in bold fruit flavor and mellow tannins that, though mild on the palate, will contribute to the evolution of the wine as it ages. “I want to make wines with excitement that you’ll discover whether you drink them now or age them,” explained Hunt. “I want to make big wines with great fruit in the middle and velvet finishes, and certainly those nuances and components will continue to develop with some cellar time.”
Though serious about his winemaking, Hunt is also passionate about enjoying life and having fun – an attitude evident by the Hunt Cellars tasting room that opened in the fall of 1999 on Highway 46 West and Oakdale Road. Inside the tasting room, a white player piano provides ambiance while the friendly staff guides you through the experience of Hunt Cellars wines. The facility is a nod to Hunt’s Virginia heritage, it feature a charming facade and over 1200 square feet of decking overlooking an acre of lush green lawn. Picnic tables will provide a peaceful spot for a relaxing snack, and visitors can enjoy a cigar in the outdoor pavilion area. The upcoming calendar of events includes plans for exquisite gourmet dinners and intimate music events.
